By now on day 3 of the #ChristmasCookies week your mouth is probably watering and you’re making your next grocery list. Today I am sharing with you one of my families easiest and favourite Christmas candies, Microwave Peanut Brittle. I have to put a stop myself from eating the whole batch; once you get the cook time just right, you may make this all year long.

Microwave Peanut Brittle

Ingredients
- ½ cup water
- 2 tbsp butter
- 1½ cups granulated sugar
- 1½ cups dry roast peanuts
- 2 tbsp corn syrup
- 1 tsp baking soda
Instructions
- In a large bowl microwave water and butter on high power for 1½ - 2 minutes or until active boiling.
- Add sugar, peanuts and corn syrup, mix well and place back into the microwave on high power for 13-15 minutes or until a deep caramel colour, careful not to burn the sugar.
- Remove from the microwave and stir in the baking soda until it foams.
- Spread onto a greased cookie sheet quickly; it sets quickly.
- Cool and break into pieces.
Notes
Each microwave is different and may require more or less cooking time, depending how hot it is. A good rule of thumb is that the peanut brittle mixture should be cooked long enough when it is a deep caramel colour but not too long that the sugar starts to burn, you can smell the burning. If you have to microwave longer, do so before adding the baking soda. If the peanut brittle has not been cooked long enough it will not harden. Once you make this recipe a few times you will know exactly how many minutes it takes for the perfect set in your microwave, write it down so you can cook it that long every time.

Okay, this feels very scarey to me since I have never used my microwave for anything other than defrost or heat’n food up! Yikes, I love a challenge like this. I know my kids will love this and a certain someone else would as well.

We McLove PB brittle around here….we like to break it up on top of ice cream!!! 😀 It’s going to be in the seventies tomorrow, so we can have ice cream ;P

It says to stir in baking soda but in ingredients list, baking soda isn’t posted there, so how much do you add?
