Most broccoli salad recipes call for sugar in the dressing, but I decided to go for savory. Which makes it low carb friendly and better for you and me.

My favorite part about this recipe is that the dressing uses mayonnaise as a base. You’re probably wonderwhy and it’s because most mayonnaise has a whopping 0 carbs but pack a tasty punch without over consuming the other flavors.

Ingredients

  • 6cupsbroccoli
  • 1/3small onionchopped
  • 1cupmayonnaise
  • 1/2cupalmondschopped
  • 2tablespoonsred vinegar
  • 8slicescooked baconchopped
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine broccoli, bacon, onion, and almonds.

  2. In a separate bowl, mix mayonnaise, vinegar, salt and pepper, in a small bowl.

  3. Pour dressing over broccoli mixture and stir until evenly coat.

  4. Cover and refrigerate for at least one hour or until ready to serve.

    This is REALLY good. Had to do a little substituting. I only used 4C broccoli but decreased other ingredients. I wanted some extra crunch so lightly toasted the sliced almonds. Didn’t have Red vinegar on hand so I looked up how to substitute. I used a bit less Apple Cider vinegar in the mayo and added some sprinkes of Sweet and Low to taste.
    Let is refrigerated till chilled. REALLY good. Something I have really been missing on this low carb plan!

    i have made this for the second time. VERY GOOD. Only changes I did make was using Apple Cider Vineger and some Sweet and Low. I also toasted the almond for added crunch. Just so good
