It’s crazy but most pregnant women don’t really enjoy eating protein during pregnancy.

Most of them actually “crave” carbs.

I had a few weeks in the first trimester of both my pregnancies that I didn’t really want to eat any protein. Actually, I didn’t even want to look at it.

Thank goodness it only lasted a few weeks. Because PROTEIN is a nutrient, which means its essential to life and because I know the importance of it, I wanted to make sure my baby was getting enough of it.

I bet your doctor hasn’t told you how important protein is huh?

I bet you that because my doctors never did and I work with literally thousands of pregnant women on a daily basis who do my Pregnancy Workout Programs and they are never informed anything about the importance of healthy eating during pregnancy.

During my pregnancies I made sure to make meals that were healthy, comforting and satisfying.

On those weeks that I was having major protein aversions, I would make recipes like this. This is like a stew and it is delicious and full of good nutrition for you and the baby. I think you are going to love it!

Here is a list of some Healthy Carbs that you can make sure to add in your pregnancy diet that are good and good for you.

For thisyummy stew recipe, I just threw everything I found in a pot and ended up with this crazy good stew.

And the best part of it is that even though it was full of veggies, both my boys ate it all up and liked it.

So its definitely a winner.

The best part about this stew is that you can adjust it however you would like.

You can use the vegetables thatYOUand yourFAMILYlike. Also, I added plentyGOOD CARBSsince they are so important for you to have during pregnancy.

But you can adapt this if you want to make it lower carbs.

Here are the carbs in the recipe so that you can decide if you want to keep them in there or not. Keep in mind that all of these are healthy.

  • Quinoa
  • Sweet Potato
  • Lentils
  • Tomatoes

When you have good options and recipes to choose from its a lot easier to eat healthy and trust me, you want to do everything possible to eat healthy during your pregnancy. It’s so not worth it to pig out and gain a ton of weight because then not only do you have a harder time with labor and delivery but you also have an incredibly tough time losing the baby weight.

I talk to women all the time who have been trying to lose the baby weight for YEARS.

That’s crazy.

Don’t let that happen when you can invest such little time and see such good results.

So my advise to you is to exercise a few times a week and make good food choices.

Don’t make this about pigging out and eating for 2 and being inactive just because you are pregnant.

On the contrary, you should be doing everything possible to do everything you can to create the best environment for your baby to grow in. And also make it easier on you postpartum, because the REGRETS come after….. When the postpartum depression sets and your baby is 6 months but you still look 6 months pregnant and you feel terrible about yourself.

It’s so not worth it. Take it from me, I talk to pregnant women everyday and I have heard all the regrets.

Chicken & Vegetable Quinoa Stew For Pregnancy Diet

Ingredients

Scale

  • 1/2 cup carrots, chopped
  • 1 onion, chopped
  • 34 garlic cloves, chopped
  • 1 red pepper, chopped
  • 1 zucchini, chopped
  • 1 summer yellow squash, chopped
  • 1 sweet potato, peeled and chopped
  • 3 cups of spinach, chopped
  • 2 tomatoes, chopped
  • 1 tsp oregano
  • 1 tsp marjoram
  • 2 cups low sodium chicken stock
  • 3 cups water
  • 1lb chicken tenderloins
  • 1/4 cup quinoa
  • 1 cup lentils

Instructions

  1. In a large pot with a little stock, cook the onions, peppers, carrots and garlic.
  2. After a few minutes add in the zucchini and squash and cook until softened.
  3. Then add in the quinoa and lentils and mix well, cooking for a few minutes.
  4. Then add in the stock and water and bring to a boil.
  5. Add in the potatoes and tomatoes, chicken and oregano and marjoram.
  6. Let it boil again and then lower the heat and simmer for about 30 minutes or until the quinoa is puffed and the potatoes and lentils softened.
  7. Season with s&p to taste.

This is a huge bowl of healthiness and yumminess and your family is going to love it. It makes a huge pot so you will have tons of leftovers and its even better the next day.
