While I have never been to Morocco, however, I have been privileged enough to have tried some of its food. Needless to say, I still hope to visit Morocco someday as it has long been a country of interest. Incidentally, one day I hope to be able to visit this beautiful and interesting country. Of course, I would love to be able to travel the world not just Morocco. By the way, these tasty morsels can be baked or BBQ’d.

Gluten-Free Moroccan Kefta

Ingredients:

  • 1 tbsp cumin seeds
  • 1 lb ground turkey
  • 2 tbsp fresh chopped mint
  • 1 tsp minced clove of garlic
  • 1 tsp pink salt
  • 1/4 tsp cayenne
  • 2 tbsp fresh chopped cilantro
  • 2 tsp paprika
  • 1/2 cup shredded onions
  • 3 tbsp fresh chopped parsley
  • 1 tsp black pepper
  • 1/2 tsp paprika

Directions:

First, preheat oven to 400. Second, oil a baking sheet or a baking stone. Next, toast cumin seeds in a pan on the stove until the seeds are fragrant. Remove seeds from heat and allow to cool. Finally, add ground turkey to a bowl. Add the remaining ingredients to the ground turkey along with the cumin seeds. Using your hands mix the meat, herbs, and spices until well combined. Using your hands shape the turkey into croquettes. Finally, lace croquettes onto a baking sheet or baking stone. Lastly, place them into the oven or on a sheet BBQ them and bake for 20 – 30 minutes.
